A few days after the expiration date and the difference should not be noticable - they should still work out exactly the same. However 3-4 weeks past, or more, and the raising agents may have lost their power, or if the cake mix includes some kind of fat it may have gone slightly rancid. If the mixture contains no fats, it should still be useable (and edible) 3-4 weeks past it's use by, but the results might not be quite as good (i.e it may not rise quite as much).

You should probably throw a cake mix away after it reaches the end of its expiration date. When something expires, it means it isn't good anymore.

Mold is formed from Moisture & Yeast (1 or other or both)especially mixes directly in box or in paperbag inside box. Very easy for moisture to get in - so I pose this question: is it worth risking getting yourself or a friend or family member ill or possibly kill them to save $3 on buying a new mix?
