It really depends on what the temperature is outside or in your coop? Usually, they'll need one until they are fully feathered. 90-95 F for the first day and then lower 5 degrees each week. If they are peeping constantly, they are cold; if they are panting, it is too hot.
The lamp used must be powerful enough to bring the temperature in the brooder box up to 100 degrees F. Higher temperatures will result in a poor hatch or no hatch at all while lower temperature will delay hatch.

The egg will require to be rotated occasionally so the embryo doesn't get stuck to one side of the egg. A certain humidity is required to be maintained. Also duck or goose eggs required to be sprinkled with water daily. These criteria will vary depending on what kind of an egg you have. Further research will need to be done.

you can hatch a sparrow egg by putting on to soft pillows and or putting it on a hankercheif and putting a lamp over the egg and see if you have ant luck with that and another thing is you don't want to put your scent on the egg too much or it sometimes will not hatch
I wouldn't use water, but if you use a heat lamp, you could probably hatch chickens. If I did use water though, it would be warm. Not hot, or cold.
