Depends on whether it's stuffed/unstuffed, frozen or thawed, and how you're cooking it (in a bag, covered, etc.), what temperature you cook at, etc.
Turkey needs to reach a temperature of 170 degrees at the breast and 180 at the thigh. Any more and you risk drying out the meat. Generally, turkeys are cooked at 325-350 degrees in an oven and have their own thermometers, but you should have your own as they don't always work.
Assuming you're cooking in a covered deep fryer, the oil was preheated to 350 degrees before placing the turkey in the oil and the oil has returned to 350 when you start timing, it should take 34 minutes.
It's important to monitor the temperature throughout the process. Too low and the turkey won't get cooked, and turkey normally has salmonella (food poisoning). Too high and the oil can catch fire -- don't let the temperature get above 380.
See the link below for complete instructions.

If you cut thawed turkey breast into cutlets, you can reduce the cook time significantly. Bake your cutlets for 20-25 minutes at 375º F. Cooked portions will last 3-4 days in the refrigerator so you may wish to freeze some of your cooked portions if you won't be eating them ight away. To freeze, double wrap cooked turkey breast in plastic bags or freezer paper and store them for up to 4 months. Frozen, cooked turkey breast can be reheated easily by tossing into a quick stir-fry while still frozen or cooked in the microwave.
A 26 lb. turkey should be smoked for at least 4 hours. A 26 pound turkey should feed approximately 26 people.
