How long can you keep chicken soup in the refigerator?

I had a pot of Home made Chicken soup in the refrigerator for eight years! Just kidding, eight days, I brought it to a boil for about two or three minutes with the hope of killing off any possible bacteria growth, however when boiling vegetables for a long length of time can destroy the vitamins in them, so you have to kinda wonder whether its even worth taking the risk. In our case the soup was fine we felt fine the next day.

For safety purposes, it should not be left at room temperature for more than 2 hours (less time is better). At that point, it should be reheated or refrigerated. When chilling, split it into smaller portions so it can chill faster.

Usually people only leave there left overs in the fridge for 6 to 7 days. I've learned from experience that if you put it in the Freezer it last longer. when the food freezes it keeps all the moisture and all the substances whole.
