It takes at least 2 - 3 hours to get completely cold if it's empty, up to 24 hours if it has food in it. But the food will still be kept cold enough during the original cooling process. Most refrigerators come with the instructions to chill the new unit for 24 hours before adding food - probably to make sure the system is thoroughly cold and working.

I think the answer is simple.Food should go in the refrigerator asap.You can wait a few minutes if just off of a burner.Food needs to be below 40 degrees or above 140 degrees to kill germs to go for any period of time to keep well.Under 40 works best.Ive noticed one problem with leaving food out to cool before refridgerating is that it can easily be forgotton and left out for to long and that is not good.

You should not wait at all. Put the hot food in an ice bath to cool it fast. This will insure the food not getting contaminated by bacteria.
It is best to let the food cool to room temperature before you put it in because large quantities of hot food will heat up the rest of the food in the refrigerator as it is cooling down.
