You should be able to hold your hand over coals for 5 seconds. Throw on steak, 6-7 minutes on each side. Turn once!!! Depending on thickness of cut, cooking time may vary. Just remember, when blood starts appearing on top side, she ready to turn. Also keep in mind, it will continue to cook after you take it off grill. Medium rare is the only way to go!!!
