Assuming there is no penetration of the brain, it would take anywhere from a minute (if a major artery or vein is severed such as the jugular vein in the neck or the aorta in the chest), to months from infections. It depends on what part of the body got stabbed.
It also depends on whether or not the stabbing instrument was removed from the wound or left in. If it is removed the wound will hemorrhage and blood will flow out which increases the rate of blood loss, while if the instrument is left in the victim will last a little longer.
One does not necessarily die from a stab wound. In fact, many people recover.

The liver is extremely vascular, meaning LOTS of blood flows thru it. If it gets ruptured you have about an hour I would guess. Your body does a lot to stop blood from leaving the body, but without surgery you're a goner. Other than the pain of the injury, its not a bad way to go.
