FDA's Refrigerator & Freezer Storage Chart (available online) indicates that frozen variety meats - which includes lamb liver - will keep with good quality for 3-4 months. Make sure the meat is well-wrapped to protect it from freezer burn.
Meats are kept better in the freezer. Meats can be kept in the refrigerator for 3 to 4 days if raw and 1 to 2 days longer if cooked. Always place cooked meats in an airtight container.
It only takes a few days for meats of this kind to spoil in the refrigerator. Check it to make sure it is still good. Look for slime and or a bad smell.
