Very generally, you would let them cook for 45 minutes to an hour at 350 degrees F. When checking chicken for doneness, insert a knife or fork in the thickest portion of the meat. If it is done, the juices will run out clear, if not, the juices will have a pinkish tinge and you should let them cook a little longer.

In a 400 degree oven, about 20-30 minutes. A slower oven will increase cooking time, of course. It depends on what your goal is (how you want the meat to cook) and often on what else you're cooking with them. But you probably figured that out.

A key to cooking chicken pieces might be to test the biggest one to insure the juices run clear (and not bloody). Chicken quickly goes from cooked "just right" where it is moist and fully done to overcooked and dried out, particularly in a hot or "fast" oven. Testing it is the best idea, at least in a fast oven, and it only takes a moment. Your family and/or guests will thank you.

Dark meat (legs & thighs) has far more moisture than white meat (wings & breasts) so you will have to cook it about 3-4 minutes longer than white meat. Since temper-

ature plays a role, I can't give an exact answer on how long - but at 400' it would take about 13 min for white meat and about 16 min for dark meat. If deep-fat frying,

food normally floats when it's done, although it's better to allow it to float a little bit just to make sure it's done all the way to the bone.

According to American food sanitation codes, any chicken must be cooked to an internal temperature of at least 165 degrees Fahrenheit. How long it takes to get to that temperature depends on the thickness of the meat and the cooking temperature.
