Foods that are left out in room temperature for more than an hour can begin bacteria growth. Our stomach acids can kill some of these bacterias but not all and some can make you very sick. Keep foods OUT of the danger zone- Above 45 degrees and Below 145 degrees. Between these temperatures bacteria lives and breeds on our foods.
It can last up to 2-3 weeks if unopened, and up to 10 days after opening if stored in the refrigerator. Freezing is not good for ricotta as the ice crystals in freezing change the melting characteristics of the cheese. Storing near freezing will prolong the life of ricotta.
Real cheese dip will go bad in a few hours if left out of the refrigerator. If the cheese dip is in the refrigerator it should last about a week.
