To roast carrots its a good idea to cover then in a thin layer of oil, (olive) and sprinkle with a little salt, before roasting for an hour in an oven at 200 degrees C.

Carrots steam quickly, if you have a good rolling boil in the pan. Baby carrots will steam in 3 or 4 minutes, even large Bugs Bunny size carrots will cook in about 10 minutes, more or less, depending on their thickness and the volume of carrots being steamed. But be sure and take the carrots off the steam before they become completely soft, they will continue to cook in the residual heat even after they are removed from the stove.
