if you keep it in a dry cool dark place it can last for months.

If some light or humidity reaches the cloves, they will start to sprout, but you can still use some of them by removing the sprout when cutting the clove.

Garlic stays good until green sprouts appear.

The End.

Garlic should not ever be stored in the refrigerator (it encourages premature sprouting) garlic is usually planted in the fall for a summer harvest after all, only peal what you need and store the rest in a cool dark place.

Garlic should never be stored in the freezer or refrigerated. It causes it to spoil faster, can destroy the cell structure and causes the garlic to sprout early, and will destroy the flavor whether you realize it or not. When stored in a cool, dry place away from direct light most commercial varieties (usually California early and late) will last 4-12 months.

The shelf life for garlic depends on how it is prepared and stored. Whole garlic will last for up to six months, while fresh cloves last for 2 months.
