As long as the particular food contains organic material and oxygen is present, it should always be refridgerated to prevent microbacterial growth. If oxygen is not present, like in sealed cans, food can be preserved in normal room temperatures for a longer period of time without being ruined.
Most everything will go bad at some point. But foods with fats in them spoil more quickly than those that don't - and broth has a lot of animal fat.
