If the spaghetti sauce was prepared from fresh and/or freshly opened foods, it will not be adversely affected by leaving it out for four hours, or even six. But it is important to cool and refrigerate foods promptly. Don't get carried away by "pressing your luck" with the margins. Cool your food and get it in the fridge expeditiously. Hint: You can put a few inches of cold tap water in a sink with the stopper in place and set a hot pot in this "bath" to promote cooling. Balance food safety, energy efficiency and water usage to get the best results.
