I always keep mine about a week in a sealed ziplock bag. After that I throw it out. We've never had any problems or gotten sick.
Once you have openend it keep it a sealed container and use it up...
Unless it was specifically designed to be shelf stable - which should be indicated on the package - it should not be left unrefrigerated for more than the short period of time it takes to get it home...
