There are so many different villians in the Bond films that could be well-known for a variety of reasons, but here are a few that stand out from the rest:

This is a tough question to answer at a specific level. To date (August 2012), there have been twenty-two official Bond films from EON Productions. If we are to assume that each film has one villain, then there have been 22. However, some of the films are more ambiguous as to who is considered a main villain. Here is a list of the villains who have appeared in the films:

1. Dr. No - Dr. Julius No (1)

2. From Russia with Love - Rosa Klebb (2), Ernst Stavro Blofeld was more of a background character in this film, and would thus not be considered a villain, and Red Grant was a henchman

5. You Only Live Twice - Ernst Stavro Blofeld (5)

6. On Her Majesty's Secret Service - Ernst Stavro Blofeld (5, since he's the same character, albeit played by a different actor)

This makes a total of twenty-five villains in the main Bond films. The unofficial remake of Thunderball, Never Say Never Again, also has a villain in the form of Maximillian Largo, a reimagining of Emilio Largo.

This is not counting the Video Games and the novels written after the death of Ian Fleming. Ian Fleming himself wrote twelve Bond novels plus two collections of Bond short stories. In these there are roughly sixteen to eighteen specific villains, not counting henchmen.

Of the James Bond films by EON Productions, Ernst Stavo Blofeld appeared in From Russia With Love, Thunderball, You Only Live Twice, On Her Majesty's Secret Service, Diamonds Are Forever, and For Your Eyes Only. The first two films mentioned only shows Blofeld's torso (holding a cat), but doesn't show his face. Blofeld also appeared in Never Say Never Again, which would make sense since the movie (which was not made by EON Productions) is a remake of Thunderball.
