There's no formal requirement, but hard to do the things a pope needs to do without Latin and Italian. Most modern popes know English, and also the language where they were born. So technically none, but most know 3-4 or more.
Nowadays, a Pope would be at a disadvantage if he didn't know English, a couple a European languages including Italian, plus ancient Greek and Latin. There are NO specific languages that a Pope must know, although it is assumed that he would know Latin, specifically Church Latin, as it is the official language of the Church.

The official languages are English and French. Of course ther are millions of recent immigrants who speak other languages. Many that I know personally speak languages such as Hindi, Urdu, Vietnamese, Chinese, Tagalog, Spanish, Russian and Croatian.
