I signed up for an account here JUST because of the previous answer saying there are eight ounces in one cup. There are fluid ounces (the ounces in a measuring cup) and there are weighted ounces (the ounces on a scale). Obviously, if you throw lead fishing shot into a 1 cup measuring cup, it does NOT weigh 8 ounces (which is eight ounces of fluid ounces).

Anyway, the amount of moisture in ricotta types and brands varies but on average one measured cup of ricotta is about 9 ounces;some higher end ricotta is bit "drier" and can give you 10 ounces of ricotta per measured fluid ounce cup. Consequently if you buy a 16 ounce pound of ricotta of your average grocery store variety, you have about 1 3/4 cups of ricotta; it's less than 1 2/3 cups if the ricotta is a bit drier. (There's also ricotta that looks/acts more like mozzarella, but that's a whole 'nother conversation - lol. Ricotta actually means "recooked" and a lot of cheeses can fall into that category. I'm assuming you mean the most common type.)

The 9-10 ounces vs. 8 ounces doesn't sound like a big difference, but for recipes where the amount of moisture is critical, as it is in some ravioli recipes, it can make the difference in whether you produce an acceptable product.
