One. RJ-45 is a specification for a certain style of connector.

There are several TYPES of RJ-45 connector and the differences in them are in regards to the types of cable to be used in them. Some examples are, "Stranded wire" to be used with stranded (more flexible) conductors, "Solid Conductor" to be used to terminate cables with a solid wire and "Universal" which may work on either.

The specific difference in them is in the spades that are designed to cut through the insulator and provide a mechanical connection with the conductor inside upon crimping. While the "Stranded" specific type has more of a flat blade design, the "Solid" specific spades are designed with three "fingers" which straddle the solid conductor on both sides and the Universal spade is somewhat of a hybrid between the two.

From my experiences, the only real problem arises when you try to use a stranded version RJ-45 on a solid conductor wire. When this is done, the solid spade simply skips off to one side of the solid conductor after it pierces the insulator. While this may very well be touching the connector and providing a connection at first, any flex or age leads to a very intermittent connection at best and you'll be troubleshooting this connection in very little time.

I've not had a problem using the other versions on the other types of cables: Universal on either or Solid spade on stranded wire.
