Before the Romantic period, there was only one timpanist in an orchestra. Berlioz introduced four timpanists in his famous composition: Symphony Fantastique. Since after, it is not unusual to have more than one timpanist in percussion based repertoire.

Four mostly. If your written a piece for them go with four, five is pushing it unless its a professional orchestra six is most likely to much three is kinda hard to write for (cleverly) but safe. keep in mind you can change pitches in the middle of songs provided you allow time.

Typically, 2 or 3, played by one person. However, the timpani is not used in every single orchestral piece ... it is used only when called out (specified) by the composer.
