The numbers vary because if you read the Gospels of Matthew, Mark, Luke and John the miracle of the loaves were told here and retold. It did not happen once. The miracle seem to happen on several occasions (if my understanding is correct.) There was this time that 5,000 were fed and then theres another where 4,000 were fed. I suggest you take time and read your Bible.
