Generally cattle are not slaughtered for only the production of leather, leather is a by-product of all cows. Once they are slaughtered most parts are used for other products so nothing is wasted.

A beef animal usually has a carcass weight that is 50% of its live weight.

Answer 2:

But even though only half of the original weight goes for beef, nearly every bit of the cow is used. The hooves are ground for Gelatin, the skins are made into leather, the bones and horns are ground for bone meal, the tongue, liver and kidneys are also sold in butcher shops, and a bunch of the other parts go into Hot Dogs, dog food, and other products.
