Well in the episode where they sneak out with Wendy to the store at the end Dipper tells them he's really 12 and not 13 and Mabel and Dipper are twins so Mabel is 12

Dipper and Mabel would actually be around 20-21 years old as they were born on August 31, 1999. Nobody is correct saying they are 12 as in the last episode of the series, they turned 13. The last episode was their birthday
