"Converting" an oil furnace to electric will not be economically practical. You'd be far better off getting a "ground source heat pump" and having someone install it for you. They're much more efficient than the older style electric heat that uses resistor heating elements.

Oil furnaces cannot be converted to gas - LP or natural - as they have totally different burners and have very different internal construction.
Yes you can do that. I had an oil fired furnace that also heated the hot water in a coil inside the furnace. I got an electric hot water heater and had a plumber disconnect the coil in the furnace and hook up the electric hot water heater. No problems after four years.
