Years ago they used "root cellars." It was cool, dark and dry inside. So, if you have a cool, dark and dry area then place your potatoes there. When you potatoes come in a plastic bag, take them out and either put a them in a box or a gunny sack. Plastic holds the air in and will make them rot and the small holes they do put in the plastic bags aren't usually enough to stop the potatoes from rotting. TIPS: If you find a couple of rotten potatoes take ALL the good potatoes out and rinse them and air dry them on paper toweling. Throw out the rotten potatoes into the garbage or they will reek out your house (as you already know.) If you want to keep tomatoes for a bit, put an apple in with the tomatoes and you can also mix apples with potatoes to give them a longer life span. If you have the small red or yellow potatoes and have room in your crispher in the fridge then put them there if you think you'll be eating them soon.

new potatoes will store for shorter - approx 1 month

Try storing without washing as well as in a plastic bag with vent holes is that's all you have, but brown paper or burlap loose wrapping is best.

Store mature potatoes at in a paper, canvas, or burlap bag, in a cool, dark, well-ventilated place. Exposure to light causes them to turn green. The ideal way to store potatoes is in a dark, dry place between 45F to 50F (between 7-10C) as higher temperatures, even room temperature, will cause both mature and new potatoes to sprout, dehydrate, and shrivel prematurely. While most people do not have root cellars that provide this type of environment, to maximize the potato's quality and storage, you should aim to find a place as close as possible to these conditions. Storing them in a cool, dark closet or basement may be suitable alternatives. Potatoes should definitely not be exposed to sunlight as this can cause the development of the toxic alkaloid solanine to form. Potatoes should not be stored in the refrigerator, as their starch content will turn to sugar, giving them an undesirable sweet taste, and they may develop dark spots. In addition, do not store potatoes near onions, as the gases that they each emit will cause the degradation of one another. Mature potatoes stored properly can keep up to two months. Check on the potatoes frequently, removing any that have sprouted or shriveled as spoiled ones can quickly affect the quality of the others. New potatoes are much more perishable and will only keep for one week. Cooked potatoes will keep fresh in the refrigerator for several days. Potatoes do not freeze well.

You don't want to have soft potatoes is really the key to when they are bad. Potatoes that have started to go soft will often start to grow roots but even when you have soft parts and roots you can trim those parts off and make them. this is why I prefer the freeze dried potatoes. Hungry jack and other boxed potatoes are made from real potatoes, they have just been freeze dried and when you make them you are adding the moisture back into them. Being a single male living alone I like to have mashed potatoes but going out and buying one or two potatoes when I want them or buying a bag that will just go bad isn't the most convenient thing. So I buy the box of freeze dried and it sits and has a shelf life of a year.

Keep them stored in an opaque bag, make sure that you are not storing them with other vegetables, keep them in a cool location, and make sure the area isn't to moist or the will begin to sprout and germinate. If your potatoes begin to shrivel or germinate remove them immediately from the cluster.
