Step 1
Place six egg whites in a smaller mixing bowl and let sit in room temp for 25-30 minutes.

While waiting, combine 2 tbsp of sugar and 2-2 ½ cups of almonds in a food processor. Cover and process until ground.

Preheat oven on Bake for 350F.

In larger mixing bowl, add ½ cup butter and the rest of the sugar. Mix until fluffy and light.

Add your egg yolks in one at a time, beating well throughout each addition.

Beat in the chocolate, espresso, cocoa, orange juice, espresso granules, almond and vanilla mixture.

On high, beat your egg whites from the smaller mixing bowl until you notice them stiffen. Then, fold them into the batter.

Pour your delicious mixture into a greased 9-inch spring form pan and place onto the baking sheet. Bake for 45-50 minutes, or until the cake springs back when touched lightly.
Step 9
Cool on rack for about 10 minutes.
Step 10
Run knife around cake to loosen, allow to cool completely.

You may add whatever your taste buds desire for extra flavor. Chocolate curls, coffee beans, and confectioners' sugar, and chocolate icing are all very popular.
