baking from western civilization is not known to the Philippines before Spanish regime.But locally the Ethnic people of this Archipelago have already their own type of flour called (Yuri/yuro) a flour made from Pugahan palm(similar to foxtail palm of Australia), rice flour made into Puto bungbong,bibingka and other kakanin and flour from cassava or balinghoy and also corn(ma-es).The procedures in cooking are almost the same concept as in baking but more primitive/practical using charcoal in a ceramic object or in Pugon(kiln).
