The Motte and Bailey was quick to construct, but was generally made of wood. This made it extremely vulnerable to fire-flinging attacks - and also quite temporary, too. Generally, they were built of sandstone or limestone, but the whole castle wouldn't have been made of stone - it was expensive and unwieldy. Costs would have been cut by using wooden roofs, partitions, and supports.

There was no one way to build castles.

Early castles were made with wooden stockades on the tops of hills, with an enclosed area at the base. These castles were simple, and required very little in the way of skilled labor.

Later castles were mostly made of stone, but there were important castles made of brick. Masons were responsible for much of this work, but they were not the only skilled craftsmen needed. Most of the labor was supplied by local people, such as serfs.

bricks do the math . how were castles made is the same question as what were castles made from and they were made from bricks, wood.stone and any other material they could find. normally people who were rich, their castles would be made out of brick and stone , but the poorer people who didn't have as much money as rich people had, but they still had quit a bit of money would get their castles made out of wood and maybe on the odd occasion some stone. but in the end it doesn't really matter what your castle was made out of just along as it was safe and as long as it would protect you from your enemy's.
