That's what many of us have been taught, but in reality from reading the Bible and scientists studying plant life mentioned in the Bible, they feel that Jesus was born in the Spring. No one will ever know for sure. I prefer to celebrate Jesus' birthday on Christmas.

When Constantine created the "Universal Church" to unite Europe he took parts of all local religions and convinced everyone (sometimes at the point of a sword) that their religion fit perfectly. The Winter Festival of Nordic religions was the time for rebirth since they were able to detect that the Sun had started north again. It was the first that they were able to notice that the midday shadow was starting to get shorter. Constantine claimed that Christmas was the day that Jesus was born and since nobody was smart enough to contradict, they all went along.

Yes it is unlikely for shepherds to have been out in the fields tending sheep considering that it is winter in the Northern Hemisphere at that time. Also,it is unlikely to have been a great time to have called a taxing given that huge amounts of traveling on foot were involved.
There is a common assumption that the Bible says December is the time of Jesus' birth, but you wont find it -it is a tradition and an error of fallible mankind. Christ's birth was a remarkable happening but isn't the main event and so is not pinpointed in time as the resurrection is more closely. So none of the above calls into question the Bible or God's credibility. The date isn't as important as the implications of the event.

Wagenseil places it in February, Paulius in March, Greswell in April, Liechtenstein in June, Strong in August, Lightfoot in September, and Newcome in October. Clinton says that he was born in the spring, Larchur says that he was born in the fall. Some early Christians believed that it occurred on the 5th of January; others the 19th of April; others still on the 20th of May. The Eastern church believed that he was born on the 7th of January. The church of Rome, in the fourth century, selected the 25th of December on which to celebrate the anniversary of his birth; and this date has been accepted by the greater portion of the Christian world.
Actually Jesus' birth date is not actually shown anywhere, they just said that December 25th will be the celebration date for Jesus' birth, but it is not his actual birthday.
Nowhere in the Bible does it mention when Jesus was born. But it does mention that when he was born there were shepherds outside with their sheep, and if you investigate the climate where Jesus was born during December you will see that it's cold and snowy with common ice storms. Therefore Christmas day is a holiday with pagan origins which was adopted by the Catholic religion.

December 25 was a sacred day where the pagan people would celebrate the god Saturn or the god of agriculture (Encyclopedia of the Catholic Religion).

You can see that December 25 was adopted to match the dates.

Jesus said to commemorate his death, not his birthday.
