I would think that carrot cake is like anything else; it can be either unhealthy, or healthy, according to the ingredients used. In place of regular flour, whole wheat and unbleached flour could be used. applesauce, or one of the healthier margarines such as promise, can replace the oil. Splenda in place of sugar, to decrease the calorie count. egg beaters instead of whole eggs to reduce the cholesterol. Of course the carrots and other fruits added is naturally healthy...So, in answer to this question, I would say carrot cake is healthy if made with modifications.
