For centuries my Sicilian family has always had "Bone Garlic Soup" on hand to treat darn near any illness. It's a simple recipe, a pot of water, 1 Chicken, 6 heads of garlic (chopped coarse) and 6 onions (also chopped coarse) If you want to add a cut up carrot or two that's fine. Boil it all for a few hours, adding water as it reduces. Pull the chicken out, and pull the meat off the bones. Cut up the bones and return to the broth. Boil for another few hours and pour through finer and finer sieves until you have an almost clear liquid. Pour off the fat and sip like tea.
This stuff makes you feel great and your flu is gone within hours.

I understand that due to the rapid weight gain of chickens because of the growth hormones used they are slaughtered younger, but with good weight. Because they are young the bones are not yet densely calcified. As the chicken ages the bones become more dense and seal porosity. In years gone by they aged longer before slaughter and had adequate bone density to seal in the marrow in the bones, now they are not old enough to have the bone density to seal marrow. Through the cooking the marrow leaches out into the meat and causes the dark color.
Yes, you can eat pork bone marrow though it doesn't yield as much marrow as beef bones. Pork bone marrow is used in soups (try Tonkotsu Ramen or numerous Chinese soups) and can be eaten roasted or cooked however you like, just like beef marrow. There's a soup touted as "anti-cancer" online using pork marrow and pork marrow is used to treat diabetes, fever, diarrhea and a number of other issues. The previous answer was ridiculous.
Unless you have a giant needle and you actually convince somebody to let you eat their marrow then yes. oh and scientifically yes you can eat it ,everything that you eat, the digestive system absorbs all of the nutrients and adds it to your bones and other parts and fluids of your body so its good for you

these chickens obviously spent a good portion of their lives on their feet - their is more vascularization (red marrow) in chicken legs than breasts or wings
