The liver acts as filter of sorts. It detoxifies the body.

The liver is an organ that could have a high level of toxins remaining after slaughter. The amount of toxins in the animals environment (like pesticides) would be a determining factor in how many toxins the animal's liver had to deal with.

Eating beef liver from an animal that was raised on an organic farm would greatly reduce the environmental toxins since harsh pesticides are not used in organic farming.
