Yes, you can eat a green banana, but they can be bitter when eaten raw. There are recipes for them in cooked dishes, usually for bananas that are only partially still green and are very firm. They can be baked right in their skins in a 350 degree oven for about 20 minutes on a cookie sheet. Leave skin intact, they do not burst. When slightly soft to the touch, carefully slit open skins and add salt and/or butter and then eat directly from the skin with a spoon to lose no juices. Or you can sprinkle with lemon or lime juice along with the salt. Other ways to season baked bananas are: sprinkle with sugar and cinnamon with or without butter, or with sugar and lemon or lime juice, or with sugar and ground dried hot chiles or red pepper. You can do the same with ripe bananas (best before they begin to have brown spots), and you will enjoy a sweeter version of the above cooked green ones. The green bananas have a slightly more starchy flavor, much like plantains, but are not as fibrous so they don't need the smashing and second cooking most plantain recipes call for. Baked bananas with savory seasonings make a wonderful side dish, especially with spicy dishes using very hot chiles like Habaneros and Scotch Bonnets. It is a secret among "Chileheads" that if you bite off more than you can chew of an especially hot Chile, a quick bite of banana will help ease the burn.
