"Many" and "much" both refer to quantities.
In general, use the word "much" for something that you are able to measure such as liquids or substances that don't lend themselves to being counted.
Normally, "many" is used to talk about things that can be counted. It is usual to talk about "many vegetables" when referring to the variety of different vegetables on a menu for example. One would also say "many potatoes" if there are a lot of boiled or roasted on a plate. However, MASH the potatoes and it will be usual to say something like "there isn't much potato on my plate"
