I would not suggest trying it with soft cheese...but I have chopped hard cheese..all you have to do is use your pulse button and watch the progress...when it is at the consistency you want stop and remove it from the food processor...hope this helps
If it doesn't mess up the recipe, you might add a small spoonful of flour to help keep the pieces of cheese from sticking to each other.
Also, some cheeses benefit from being partially frozen (not rock hard!) before processing.
You could also do soft cheese if you use a little pam non stick spray. there is no need to freeze the cheese just pulse chop and us pam.
Hard cheeses like Parmesan or Romano can be chopped. Turn the processor on and drop cubes of the cheese in. Process until desired consistency. This will make a lot of noise.
Cheeses like swiss and cheddar are probably easier to grate in the processor. Use the grating disk.
With Cheeses like blue or feta just crumble by hand. processor with puree
