Either is fine. The point is that you are going a bit beyond the simple "thank you" and giving emphasis to your gratitude. Probably in the US, "thank you very much" is more common and especially more appropriate for written correspondence. "Thank you so much" is a bit less formal; and while either expression is still fine, "thank you so much" is more likely to be used between good friends.
Spanish: "Buen provecho" It's like in french "Bon apetit", it means the same.
"Very" should be used with "much". "So" should be used with "many". "Thank you very much." "There are so many."
