Californa Pepper (schinus molle), is a soft, fast burning wood. Seasoned, with average or dry moisture content it is a "smokey" wood not suited for burning in a fireplace or wood stove.

It is however a fantastic wood for barbeque or smoking. Also the ripe red peppercorns must be free of leaves or stems and can be put into a small iron skillet mixed with a few hot coals to produce a very thick smoke inside your barbeue. Done right you will sear off grilling with brickettes!
