Rit dye is safe for Easter eggs. I have a VERY greek neighbor and thats all she uses for her red Greek eggs. I dont know how she gets them so vibrant but, it is safe. I just ate one :)

I just spoke with the RIT dye company (contact information http://www.ritdye.com/Contact+Us.29.lasso), their products are not food safe, eggs my be dyed with their dye but then only used for decoration. So you might not die after eating an egg, but as with consuming any toxin it could contribute to illnesses in the future.
