To prevent bacterial growth, fish should be cooked TO an internal temperature of 145 degrees F and held for at least 15 seconds. It can be cooked AT whatever temperature you like. Always check the temperature in the thickest part of the fish.
Bacteria survive and grow between 40 and 140 degrees F, they grow most rapidly between 60 and 120 degrees F.

It depends on your cooking utensil, whether the grill, oven or fry pan. The faster is cooks, the less soggy it can get in the batter/butter, etc.
I do both grill and pan. Grill I put it in a foil pan. For both---1 TB butter, then several pieces of fresh pineapple. Let them sear the juices. Then I lay frozen pieces of fish on the pineapple and cook till done. Flaky fish is the sign. With the MN fresh fish that is abundant or grocery store purchase, I fix it the same. You can BAM a little kosher salt on top at the end. The sweet and salty on the fish is DELICIOUS! You could choose other fruits to try this with but the pineapple has flavor that pleases many meats.
Well, if you want it to cook fast then you can put it on 400 degress. But make sure that you keep a close eye on it. I prefer that you put foil over it, so the fish will stay juicy. It is optional to put Lemon Juice in the bottom of the pan. It gives it extra flavor, it stops the fish from sticking and it makes the fish EVEN MORE juicy then it would be without it.
On the other hand, if you want it to cook...not to slow but not too fast, where you can actually leave the oven, then i recomend you put it on 350.

You'll bake any meat usually 350 and you could go up to 400 to get it done faster if it's not a large piece of meat.
