I have not done it myself, but I know someone who can cook a 12 lb bag of rice for rice pilaf. She browns it in the roaster oven first w/butter, adds the seasonings, and water, then removes the tray and covers it w/foil and puts it in the oven on low ( I don't see why she wouldn't be able to cook it in the same unit though) Maybe it doesn't have a low enough setting to simmer it???? I'm going to cook Mexican rice for 300 people and was wondering the same thing. I usually do my rice by cups and was wondering how many cups would fit in a 18 qt. roaster? I know that 15 c of uncooked rice feeds about 150 people but I just don't know if I can fit all 15 cups of rice in the roaster?

I have cooked LOTS of rice in roasters and ovens. I use 7 pounds, about 14 cups, for 100 people, and that makes one roaster full. If you use more than that and try to finish it in the roaster, it tends to cook unevenly, which is probably why the cook above finishes in the oven. If you cook it in the roaster, leave the lid on, don't keep stirring, or it will cool off and take much longer to cook. Here is a recipe for baked rice:

How do you keep steamed rice warm?

The small back burner of your stove is the outlet for heat from your oven, so if you have something in the oven put the pot of rice on the small burner without the element on. You can also put your rice in an oven safe dish with lid on it and put the oven on very low (125 degrees F.) If you are in a hurry, put the rice in a microwavable dish with lid and heat for 2 minutes (test) and if not warm enough add another minute until you get the desired temperature. It is wise when doing this in the microwave that you put in 1/4 cup of water, mix with rice or the rice will come out too dry. The best way to take all the fear of over-cooked or under-cooked rice or keeping it warm is to buy a rice steamer and they aren't that expensive.

Can you substitute instant rice for converted rice in a receipe?

According to wikipedia, they are the same thing: Instant rice, also known as converted rice, is rice that has been precooked and dehydrated so that it cooks more rapidly. Regular rice requires approximately 20 minutes to cook while instant rice needs anywhere between five and 10 minutes. Because it has already been cooked, all that is necessary to prepare instant rice is to simply re-hydrate it with hot water.
