Try looking at the odd time signature works of these bands: Allman Brothers, Black Eyed Dog, Blues Traveler, Booker T MG's, CSN&Y, Dave Brubeck Quartet, Dave Matthews Band, Grateful Dead, Jethro Tull, Jimi Hendrix, Joan Osborne, Led Zeppelin, Neil Young, Nick Drake, Peter Gabriel, Primus, REM, Radiohead, Red Hot Chili Peppers, Rush, Soundgarden, Tool, U2. Their collective work ranges from 2/4 music to 15/8 music, or songs that contain shifts from 9/8 to 8/8 to 7/8, etc.
The song Schism by Tool is often used as an example of "odd time signatures", but it is just one of many songs that do not fit the 4/4 model of music. My examples are "rock oriented"; there are even more examples in "classical" music and "eastern" music.
Some of my personal favorites: Estimated Prophet 7/4 by Grateful Dead, River Man 5/4 by Nick Drake, Seven 7/8 by DMB, Morning Bell 5/4 by Radiohead, Spoonman 7/4, 6/4, and 4/4 by Soundgarden and Eleven 11/8, the chorus has one bar in 9/8, and after two bars of 11/8 a bar in 12/8 by Primus.
Words (Between The Lines Of Age) 11/8 on the interludes, alternating with the standard 4/4 (by Neil Young) is a good example of mixing an "odd time signature" with a 4/4 time signature. Changing from one signature to another in a song is both challenging to perform and extremely interesting to listen to. The Beatles "All You Need is Love" is in 7/4 and 8/4 (two measures of 4/4). You have heard more "odd time signatures" than you are aware of, we all have.
