almost none. A cup at the most because the slow cooker creates steam (juice) and the more water will weaken the taste. I made a tenderloin in my crockpot last week cooked on high for about 5 hours, it was wonderful and the broth was perfect for gravy. Add you seasonings (salt, garlic, etc) at the beginning.

I use my slow cooker at least 2-3 times a week. Depending upon the recipe, I would say about 6-10 hours - on low - depending upon the type of meat (i.e., pork chops, pork roast, pork loin, etc.). One word of advice, it's best not to cook pork (or chicken) with bones in it - because it becomes so tender - that the meat falls off the bone - and sometimes its hard to see the smaller fragments that have fallen off...especially chicken breasts. The smallest parts of the breast bone can get hard to see if you are making rice and/or gravy in the slow cooker with the chicken.

Slow cookers only have one temperature. The settings on slow cookers are for how fast it will work to maintain the heat.

Thus in the end, I think much of the evaporated alcohol will condense on the lid and then would be returned to the food. Net loose of alcohol, logically would seem not much. Be careful.
