Voluptuous female figure
Peter Paul Rubens was a painter. What he's mainly remembered for today is painting nude women who were, to put it frankly, on the chubby side. (In fairness, the ideal woman at the time would have been rather larger than the borderline anorexic supermodels of today.) He did portraits, in which case it's understandable that they'd reflect what the person being painted actually looked like, but he also did paintings of mythological scenes and the women in those (which he presumably could have painted any way he wanted) are also pretty chunky. He seems to have used his second wife as a model for several of these, and she was apparently fairly full-figured herself.
"Rubenesque" refers to this sort of voluptuous woman.
