Most meats (not liver) and "A" type vegetables. This is an term not used by the Diabetic Association anymore, but they include such things as lettuce (not carrots) cabbage, spinach and green beans. Starchy and root vegetables have a large 'glycemic index' and are not considered low carb. The south beach diet book has a glycemic index list with ratings of many foods. I think it is a good diet.
