Food items in the mid-19th century include meat, cheese, dairy products, produce (BIG exception to today: fruits and vegetables were SEASONABLE - that is, apples in the fall, peaches in the summer, onions and potatoes were stored over winter, apples, too). Freezing was not an option and commercial canning was not readily available. Legumes were dried, as today. Foods were simpler in that they were not processed, with the exception of smoked and cured meats. Grains were also a popular food item, whole grains like graham and rye flour were heavily used. 2 c. corn meal
1 t. salt
1/4 t. baking soda
4 T. lard (or shortening)
3/4 c. boiling water
1/2 c. buttermilk
Sift together corn meal, salt and baking soda. Work in the fat with finger tips until well blended. Pour in boiling water and continue to work the mixture. Gradually add enough buttermilk to make a soft dough, but one firm enough to be molded or patted into small, flat cakes. Place cakes in a hot well-greased iron skillet and bake in a 350 degree oven for 35-40 min.
