Answer:
It's not so much about what you say, but about HOW you say it. For example, most guys describe themselves like this when they write a dating profile:
"I'm funny, romantic, outdoorsy, I'm pretty smart, I'm laidback, I don't get mad easily... and bla bla bla"
In short: they claim to be a whole bunch of stuff, but there's no proof. That's why the best piece of advice I can give you is this one: show, don't tell. So don't SAY you're funny, show me by cracking jokes all throughout your profile description. Don't say you're romantic, show me what you would do for me to make the first date romantic. That's what women want to hear.
Another good tip: don't write random stuff that might work with all kinds of people. Be specific and write for YOUR type of person instead. So when you're into latinas? Write about Latin music, about the Spanish language, about the culture, that you're into latinas, show photos of you traveling in Latin America, and so on.
So write your profile for the type of person you want to attract, not for yourself. Because as the saying goes: if you don't stand for something, you'll fall for anything. Be specific and awesome for one or be mediocre for everyone.
Take your pick!
