First: the caveat. With the possible exception of spiny Barberries (Berberis) there are no absolutely deer-proof plants. If the herd is large enough, and food is scarce enough, deer have been known to eat almost anything. That said, there are plants that are much less palatable to deer.

There really is no way to outsmart deer. If they get hungry enough they will eat anything or almost anything. Instead of trying to defeat them join them. I currently live in Texas but lived in Carmel, Maine for a number of years. I had my garden along the edge of the woods near my stream where the dirt was rich and moisture was plentiful. The woods behind my house held moose, deer, bear and numerous other animals that can raise cann in a garden. The trick to keeping them out of my vegetables was to give them their own special treat. I planted broccoli along the edge woods and just let it grow. It really looked good for a while but as planned the deer, and moose ate every stalk right down to the ground. About the time the broccoli was gone the crab apples came in season and everything in my garden was safe for another year. Try it, it works…
