They're trick interviews, believe it or not. The interviewer will watch you to see if you can make decisions, etc. I even had one once when the interviewer was watching me to see if I used salt before tasting anything (that was a test to see if I assessed things before making improvements). This is an example of how you are judged more by your actions than your resume.
