I am assuming that you meant to say "what are legal consumable (chemical) high alternatives"?
There are many.
A 'high' is nothing more than our own body chemistry reacting to stimulus that can either be in the form of a chemical taken or as a result of physical / mental states or activities.
For example a runner (or other sports people) can get a high once they have pushed to a certain limit - this is well documented and is a result of our own natural body chemistry.
Similarly, when one takes chemicals, a similar result can occur, however this time it is the chemical itself that causes the body chemistry to react.
We are also creatures of habit who 'know what to expect'. We have an incredible potential in terms of our imagination and body chemistry. Thus if one recreates a past experience as completely as possible, going through all the same rituals and stimulus it is possible to re-create a high without the use of chemicals. This is identical to the 'Pavlov's dog'-type experiments that have been done on almost so many living things. We are creatures of habit and thus our neurology reacts appropriately when it 'knows what to expect'.
As an example an ex-cocaine addict can go through the rituals he/she used to go through to achieve the same high, but this time only imagining the substance. (There are other dangers in this as this may also serve to trigger the addictive behavior itself which would be an unwanted side affect).
