Yuca Frita.- Fried Yuca. Makes a great side dish.
Yuca is a starchy staple vegetable in Latin America and the Caribbean that is used in much the same way as potatoes. It can deep fried like French fries.
You MUST peel all the skin off prior to use!! Then soak in salt water for 30 minutes or soft enough that a fork will go in easily.
When it is ready, cut into fry shape and cook in veggie oil until light brown. Rremove and let cool on a paper towel. Serve, yum!
